Weekend Course
November 15th, 16th 2008 This is an intensive,
hands-on course for those who want plenty of action, those who have started rearing
pigs or those thinking about it and need the final push, or anybody who would
like to eat lots of good pork for two days but, most importantly of all, for anybody
who wants great recipes. €350 per person. Find

| Small classes, fantastic ingredients,
personal tuition, a great location and competitive prices - the cookery school
that has it all. What started as a small experiment four years ago - the
idea of offering a few evening cookery classes - has grown into - well - a proper
cookery school. I do all the teaching myself and this year the programme includes
day, weekend and week-long courses aimed at both beginners and experienced chefs.
A number of factors make this cookery school different: - Small classes.
For practical courses as few as eight people. For demonstrations no more than
15.
- Personal tuition. Clearly possible because the class size is so small.

The use of only first class ingredients. I am obsessed with using local, seasonal,
fresh, organic and free range (well, not free range vegetables obviously) ingredients.
- Nice
people. I don't know how else to put it. The fact is we seem to attract a very
friendly, cheerful class of attendee.
- Fantastic location. The school
is located in my restaurant overlooking the sea in Durrus and has one of the most
beautiful views (well, I think so) in the entire world.
- Lots of extras.
Parties, dinners, free wine, free tea and coffee . . . each course has lots of
little extras built in.
