This course might also be called "how-to-convince-people-you-are-actually-a-professional-chef-after-just-two-days". Basically I guarantee you will come away able to EFFORTLESSLY prepare three starters, three main courses and three puddings that will leave your guests deeply, deeply impressed. I am going to work the menu out a little closer to the weekend to take advantage of what's available fresh in the markets but there will be plenty of variety.

My aim for this course is that you will go away feeling confident and happy to invite your friends around for dinner. You will have learned to prepare a whole set of recipes that will make your evening relaxed and you a pleasure to be with. We must always remember our friends have come to enjoy our company as well as our food. I promise this will be two days of my best seasonal dishes that any of your friends would be happy to share.

We will cover a range of recipes from breads right through to puddings, and due to the fact that we are in West Cork (the home of great ingredients) we are totally spoilt for choice.

The cost is €195 for the two days and includes all your food (twelve separate courses, to be precise, so don't eat too much on the Friday or you won't have room) plus a glass or two of wine and dinner Saturday evening.
