Day 1: Arrive 11:30 for 12:00 start, finish 5:30 pm (ish)
Day 2: Start 10:00, finish 2:30 pm (ish)
This is my quickest filling course. Fish cooking has become more popular, and people seem to be
rather intimidated when it comes to cooking fish. By Sunday evening this problem is no more and
is there a better place to learn than on Dunmanas bay with the freshest of produce.
It is going to be a weekend devoted to all matters fish. It will cover every
aspect of the subject with the single exception of catching them.
As we go we will be considering different tastes, textures and properties offered
by different fish. We'll do a little filleting and also learn about which fish are
politically correct to eat (Icelandic cod is in, I am afraid wild Atlantic salmon is
definitely out).
Then - then - we'll get down to some serious fish dishes: West Cork Fish soup
(famous from my café menu); We will cook some seasonal shelfish from Dunmanus Bay,
depending on the time of year it could be scallops from the end of October to March,
lobster from May to October or something as simple as shrimp. Smoked haddock tart,
roast fish with lemon and honeyed onions, grilled tuna with tomato and caper
dressing, cod with saffron mash, baked John Dory with chilli, cannellini beans and
thyme. Plus you'll learn how to do proper chowder - something we don't encounter
often these days. Plus much, much more. Since we'll be eating everything we are
cooking I'm going to briefly cover a couple of interesting salads and vegetable
options so that we have something to accompany our sea fish orgy. Most important of
all I will show you how to pan-fry a piece of fish to perfection! Probably even more
important, we will have to do something with chocolate. What a perfect way to finish
the day!
As you'll have gathered I am not afraid to over-promise but in the case of this
weekend I can categorically say that never, in the history of Irish weekend cookery
courses, will so many different types of fish be cooked in so many different and
DELICIOUS ways by so few.
