This is the course I decided to do during a phone call from someone asking for a hands on fish
class for her husband. So now here it is and I cannot believe it but four places are gone as I write
this - now only four left on the March date.
This will be a day where I will show you how to make that perfect stock, pan fry that perfect
piece of fish, make great but simple sauces, make a pie to remember, open and cook those lovely
scallops or lobsters which will be delivered from Ahakista. We will use seaweed in a fish salad and
soup. Then you will go and do it all yourself, then you will get to eat it all and take home what is
left and you will have a nice stock of stock to put in your freezer for the weeks ahead.
It should go without saying but this course is totally gluten free (as is most of my cooking) - why cook
fish with flour! It takes from the fresh flavour, makes it heavy and needs so much more seasoning.
Then why not come to West Cork on the Friday evening and join us for dinner on the Friday night
when you can try another fish dish and also get the recipe to add to your collection.
