Ode to scrumptious, mouth-watering dishes and
no flesh in sight! A two day course designed to arm you with a complete repetoire
of vegetarian dishes. Looking back over the last couple of years, this weekend
has atttracted lots of non-vegetarians: some with vegetarian family members, others
with small holdings and those with a surplus of vegetables all looking for a creative
way to cook the humble vegetable. It is about cooking really scrumptious,
mouth-watering dishes that just happen not to involve meat or fish. The course
will cover a few straightforward vegetarian recipes (my aim for this course is
to introduce you to beetroot, lentils and aubergines, three ingredients I think
vegetarians do not eat enough of). I'm also thinking of Roast Butternut Squash
and Cumin Soup, Spicy Red Pepper Soup with Saffron Mayonnaise, Seasonal Risotto
- but the primary emphasis will be on more exciting dishes. For instance, I will
definitely be demonstrating how - amongst other things - to prepare Imam Bayildi
and Mushrooms Armeniennes, Goats Cheese and Thyme Souffle, Courgette, Basil and
Pinenut Tart. There will be a balance between starters and main courses
(I'm not planning to do puddings - but looking back again - I have, because no
meal is complete without a good pudding). This is the weekend I really
strip Clovisee's (Gubbeen) garden bare and I guarantee that by Sunday night you'll
be able to produce at least a dozen really first class vegetarian dishes with
the casual nonchalance of a professional chef. Vegetarian cuisine is going through
an amazing renaissance at the moment and this is an excellent way to learn all
about it. As with all my courses we'll be eating everything we cook. Saturday
evening you will eat the dishes of the day watching the sun set in Dunmanus Bay. |
