A one day practical course which includes morning coffee, lunch and afternoon tea.

Learn to cook a complete repertoire of fish dishes – starters, mains and all sorts of extras.
This will be a day where I will show you how to make the perfect stock, pan fry the perfect piece of fish, make great, but simple, sauces and produce a pie to remember. We will have lovely scallops and lobsters which will be delivered from Ahakista, which I will show you how to open and cook. You will become familiar with
the use of seaweed, as it will be used in both a fish salad and soup. Then you will go and do it yourself! You will get to eat it all and take home what is left, which will include a pot of stock to put in your freezer for the weeks ahead.
It should go without saying, but this course is totally gluten free (as is most of my cooking) – why cook fish with flour? It takes from the fresh flavour, makes it heavy and needs so much more seasoning. So come and join us for the class that takes the fear out of fish cooking!
