Seaweed and Fermenting Weekend:
Date: Sat 6th & Sun 7th from 10am - 4.30pm and 10am to 4pm
Cost: €250 for two days or €140 for one.
The first day is made up of seaweed dishes and interesting ways to use it. The second day will be fermentation centred. Your choice, do the two days and get the whole picture or pick one of the days to suit your needs.
Seaweed Day - Day 1:
A day of seaweed with Sally McKenna, the author of Extreme Greens, the best seaweed cookbook on the market at the moment. We will start the morning with coffee and then head to the beach for a couple hours of extensive foraging with Sally. If the weather permits it we will have brunch on the beach where Carmel will cook a Monkfish Breakfast Roll. Then it's back to the school for an afternoon of demonstration of some very clever dishes covering starters, mains, puddings and even taking in a breakfast dish.
A day of fermenting with Clovisse Ferguson of Gubbeen Farm. Clovisse has been fermenting foods and drinks for the past three years and is always surprising us with new dishes. On the day, Clovisse will cover bread (her sourdough is to die for!), fermenting vegetables and a wide variety of fermented drinks (her speciality).
